Det gav en trevlig starkt rödbrun färg, fast då använde jag en dryg matsked sandelträ eller två till en 4 portioners köttgryta.

Har bestämt för mig att jag läst att 'saunders' ska användas för att färga mat röd i något recept, men jag kan inte minnas var. Kansk dags att gå igenom sin receptsamling igen.

I detta recept så verkar man å andra sidan kunna använda antingen blood, ale eller saunders vilket möjligen skulle kunna antyda att man vill åstadkomma en brun färg.

I vissa medeltida recept används sandelträ för att färga mat röd. Den sort jag hittat ger dock nästan ingen färg alls. Någon som vet var man kan hitta sandelträ som ger röd färg?

Står det att du ska färga rött med sandelträ?

Jag har just läst igenom Thomas Dawsons bok "The Good Housewife's Jewel" , en renskrivning av recept som publicerades 1596 & 1597. Där hittade jag följande under en fotnot till "Saunders":
"Colouring, comes from Sanders Blue, a corruption of the French <i>cendres blue</i>, azurite"

Om azurite hittade jag bl.a. följande på nätet:
* Chemistry: Cu3(CO3)2(OH)2, Copper Carbonate Hydroxide
* Class: Carbonates
* Uses: ornamental stone, pigment and jewelry.
Med andra ord är det i detta fall ett blått färgämne.

Jag sitter just nu och letar i Curye On Inglysh efter recept med sandelträ/saunders för att se om något av dem anger färgen men än så länge har jag inte lyckats hitta recepten.

Vad är det för sandelträ du har ? Jag vet inte på rak arm om det finns olika sorter men det sandelträ jag använder är mycker finmalen, påminner om malen kanel i utseendet och har en röd färg med gulaktigt inslag, mer åt det röda hållet än orange.

Jag har hittat lite information om sandelträ (Pterocarpus Santalinus)på www.herbsforever.com
Där står att färgämnet i Sandelträ (Santalic acid, Santalin) inte löser sig i vatten eller olja. Däremot blir det vackert gult i eter, rött i alkohol och ättiksyra.
Prova att ha ättiksyra i maten eller rör ut sandelträet i något ofärgat alkoholhaltigt.

Det sandelträ (= virke) jag stött på har snarare utmärkt sig för doftens skull än för färgens. Kan det ha varit bark man använde, månne?
