Paradiskorn hade de, som nämnt nånstans på Curry House i Göteborg, under Guineapeppar. Men senast jag pratade med han som hade det så ville han inte ta in mer... det var tydligen dyrt och sålde inte så bra. Galangal är lättare.

Vad jag kan se från recepten ur "Good Housewife's Jewel" och Cariadoc's Miscellany så tillsätts kryddorna vinet innan de silas ifrån och inte så att de läggs i silen och vinet hälls över.
"Then cast them through your bags two times or more as you see cause" syftar säkerligen på att man får sila det flera gånger beroende på omständigheter som hur fint man har mortlat kryddorna osv.

Jag skulle nog värma vinet till 40 grader eller så och sedan låta kryddorna ligga i medan det sakta svalnar ner till rumstemperatur.

Ett alternativ till silning vore att lägga kryddorna i en påse som sedan lätt fiskas upp men troligen får du förlänga kontakttiden i detta fall pga att du inte har någon direkt rörelse på vinet (som du skulle få vid kokning).

Av ren nyfikenhet: Kör du med rött eller vitt vin?

Där kan man hitta info om en del kryddor, bl.a. paradisfrön.
Smaken är i mitt tycke ganska het, i övrigt svårbeskriven även om just svartpeppar och kardemumma kommer ganska nära.

Paradisfrön finns i Sverige såvitt jag vet endast på Häxans Hus i Stockholm, om de har det kvar fortfarande, annars kan man beställa det lite varstans ifrån, sök på "grains of paradise" i Google.

I NE hittar man följande:
Paradisfrön, paradiskorn, guineapeppar, meleguetapeppar, meleguetta, (Aframomum melegueta), har använts som en billigare ersättning för peppar. Paradiskorn omnämns tidigast 1214 i Treviso i Italien och kunde i början av 1300-talet inhandlas i Stockholm. I dag inskränker sig användningen till en del typer av pickles och likörer.

Paradisfrön byttes sedan ut mot svartpeppar i köken men levde kvar inom bryggningen. Idag brygger Boston Beer Company sin Summer Ale med paradisfrön.
